Granular seasoning-grade MSG is a free-flowing kitchen and food-service crystal, coarse enough not to dust a warehouse, fine enough to dissolve in a wok sauce. It is the 20 kg sack a canteen buys. Assay is food-pure; particle size is chosen for scoops and mixers. It can look like coarse salt, which is why some kitchens keep it in a labelled tub. Use it for wet cooking; use powder for a dry rub that must not sparkle. Caking means humidity, not a different variety.
