Crystallised pure MSG is the high-assay, low-moisture crystal sold to seasoning plants and serious kitchens—the Ajinomoto-style pinch. It dissolves clear, tastes only of savoury, and is the reference against which impure or blended "seasoning salts" should be judged. One light pinch in a soup is a lot. It is not a spice blend. If the crystals are caked or beige, the lot is tired or cut. Use fine powder when you need a dust on chips; use this when you want to dissolve a known weight into a broth.
