Soft Mono Diglycerides

Soft mono- and diglycerides are paste or plastic grades from more unsaturated feedstocks, easy to melt and blend into margarine, ice cream mix, and soft bakery systems. They offer balanced emulsification at lower cost than fully distilled monoglycerides when maximum mono content is not required. Scoopable at warehouse temperatures when well formulated, they should smell cleanly fatty, never painty. Blend fully into the fat phase before emulsification. Protect from warm air to limit oxidation of unsaturated chains.
