They set firmer crystal networks and handle cleanly in dry or warm-melt dosing without sticky paste mess. Melt completely into the fat phase; incomplete melt leaves white specks and weak emulsification. Flavour must stay neutral. Store cool so beads do not cake into a fused block in hot warehouses.
