Granulated monk-fruit sweetener is a crystal-looking 1:1 bag, almost always erythritol (or similar) with a monk-fruit dust. It measures like sugar in a cup for coffee and simple baking, with a cooling erythritol finish and little caramelisation. Cookies spread less; ice creams freeze harder unless you adjust. It is a product, not a fruit. If the bag lists monk fruit last, you are buying bulk polyol with a flavour claim. Fine for sweetening yoghurt; clumsy in a mirrored caramel. Recrystallisation on a muffin top is the erythritol talking.
