Blackstrap Molasses

B tier

Blackstrap is the last boil: bitter, salty-mineral, almost burnt, with the most residual minerals and the least sucrose. Health-food spoons and some animal feeds made its reputation. In a cookie it can taste of iron and ash if you use it one-for-one for light molasses. A tablespoon seasons baked beans or a pot of black beans. It is not a pancake syrup. If you want British black treacle, you are in the same neighbourhood but not the same refinery story.
