LaMancha goats are an American dairy breed famous for very short “gopher” or “elf” ears. Milk is rich and clean with solid butterfat—excellent all-purpose goat milk for drinking, yoghurt, and cheese without needing European imports. LaMancha milk behaves as premium US goat dairy: good solids, approachable flavour. Farmstead creameries use it widely. The ear trait is cosmetic; culinary quality comes from dairy selection and management.
