Khillari cattle are swift, powerful draft zebu of Maharashtra and Karnataka, bred for plough and cart more than the milk pail. Lactation covers calves; surplus milk is limited and mild. Khillari milk is not a commercial dairy category. Household surplus may enter tea and curd on draft-oriented farms. For recipes, prefer dairy zebu such as Gir or Sahiwal when indigenous milk character is wanted with usable volume.
