Whole goat milk is unskimmed or standardised to full-fat drinking milk for that species—creamier mouthfeel, fuller flavour, and better performance in sauces and foams than skim. Fat percentages differ by species: sheep and buffalo run naturally richer than camel or mare. Drink cold, steam for coffee if protein allows, or cook into custards. The default when a recipe says milk without a fat band. Keep refrigerated and use by date. Species character still shows: clean caprine note and white colour.
