Belted Galloway is the white-belted Scottish beef icon. Like unbelted Galloway, it is not a dairy breed; lactation supports calves on rough grazing. Milk volume and dairy conformation are secondary to hardiness and beef quality. Do not plan recipes around Belted Galloway milk—it will not appear in shops. Homestead bottle calves may leave tiny surplus for the farmhouse. Flavour, when tasted, is ordinary mild cow’s milk without dairy-breed richness.
