Melomel

Melomel is mead fermented or finished with fruit—berry, stone fruit, apple (cyser), or grape (pyment). The fruit should taste like itself, not like a cooler, and the honey should still show. A blueberry melomel that tastes only of jam has been over-fruited or back-sweetened without structure. Drink it with the same fruit on a plate, or with a mild cheese. Cooking with it is a gamble: fruit and honey both concentrate. Use a dry, tart melomel if you must deglaze; otherwise keep it in the glass.
