Golden Delicate (once Grade A Light) is early-season maple: pale straw, soft vanilla-wood, and the least molasses. Quebec and Vermont bottles at this grade are for people who want maple without a dark punch. It is still boiled sap, not corn syrup. Pour it on pancakes if you like a light cup of tea more than a stout. In baking it disappears under spice. Darker grades brown harder and taste more of the sugarhouse.
