S tier
Dark Robust is later-season maple, brown-amber, louder caramel and cocoa, the grade bakers want when the syrup must show through ginger, bacon, or rye. It was once sold as Grade B in the US, which wrongly sounded second-rate. Use it in baking, baked beans, and a pork glaze. On pancakes it can bully butter. It is still maple sap, not molasses—keep that distinction on the tongue.
