Amber Rich is the modern default table maple: clear amber, caramel and wood, enough flavour to taste on pancakes and in a vinaigrette without the burnt edge of very dark syrup. Most honest grocery "maple syrup" that is not labelled dark sits here. This is the bottle to cook with when a recipe says maple. Reduce it for a glaze; it will not turn as bitter as blackstrap. If it tastes only of sugar and smoke flavour, it is not amber maple.
