Jun is a SCOBY ferment of green tea and honey rather than black tea and sugar. The culture is related to kombucha but not a swap: jun prefers honey and a cooler ferment, and the cup is softer, floral, and often a little less acetic. Calling every honey kombucha "jun" is sloppy; the culture and the feedstock matter. Drink it cold like a delicate kombucha. It will not replace a sharp black-tea bottle in a dressing. Home brewers should not pitch a jun SCOBY into cheap sugar tea and expect jun.
