Green Tea Kombucha

Green-tea kombucha ferments the same SCOBY on a green or sometimes oolong base, so the cup is lighter, grassier, and less malty than a black-tea batch. It can finish cleaner and more floral. The culture still wants real tea—herbal "tea" without Camellia will starve it. Drink it colder and younger than a stout black-tea ferment; it shows off-notes faster. In a dressing it is gentler. Do not expect the same colour or the same backbone as the classic bottle.
