Flavoured Kombucha

Flavoured kombucha is a finished tea ferment dosed with fruit, ginger, herbs, or juice—usually in a second ferment that also lifts the sparkle. Ginger-lemon and berry are the grocery defaults. A good flavoured bottle still tastes fermented; a bad one is soda with a kombucha claim and a vinegar afterthought. Use ginger-forward bottles in a sharp dressing. Fruit-heavy ones belong in the glass, not in a reduction. Live flavoured bottles can over-carbonate— treat them as you would any second-ferment jar.
