Classic Black Tea Kombucha

Classic black-tea kombucha is the original grocery and home ferment: sweetened Camellia sinensis (usually a straightforward black tea), fermented on a SCOBY until it is tart, faintly malty, and lightly sparkling. The tea tannin gives the drink a backbone that green-tea batches can lack. A good bottle smells of apple-cider brightness and tea, not of solvent. This is the default if a recipe or a pairing just says kombucha. Use it cold in a light dressing or drink it as is. Over-fermented black tea kombucha becomes vinegar—useful for cleaning, not for a guest.
