Mirror dory (Zenopsis nebulosa and related) is a silvery deep-water relative sold in Australia and New Zealand as a more affordable dory-style fish. Flesh is white and mild with a slightly softer flake than premium Zeus faber John Dory, making it popular for everyday fillets and fish-and-chip style service in the region. Best crumbed or pan-fried, baked with citrus, or used in mild fish pies. Handle gently—mirror dory can dry if overcooked. It will not fully match John Dory’s fine-dining density, but well-iced fish is a solid whitefish choice.
