Partial Invert Syrup
A tier
Partial invert leaves a share of sucrose intact so the syrup is a little less hygroscopic and a little less aggressively browning than full invert. Some golden-style bakery syrups and ice-cream stabilising blends sit here. Use it when a formula asks for invert but you do not want the full water grab of a 95 percent invert. It is still a technical syrup, not a breakfast pour.
