Tunisian harissa is the reference chilli paste: baklouti or similar, caraway, coriander, garlic, oil, brick-red, hot and aromatic not just burn. It is the couscous and grilled-fish condiment of Tunisia. A spoon in a stew or on the table. Rose harissa is floral and usually milder. Generic "harissa" that tastes only of cayenne is not this.
