Thick Grape Molasses

A tier

Thick grape molasses is a longer boil: almost spreadable, darker, more caramel, less bright juice. It stands on bread. Some breakfast pekmez is this texture by design. A thin cooking grape molasses is a different pour. If it pours like water it was not this grade—or it was cut.

History

Thick grape molasses was the tahini-ribbon texture on export breakfast tables.
