Petimezi is Greek grape molasses: often a little brighter and more winey than some Anatolian pekmez, used in sweets, on yogurt, and in older recipes before cheap sugar. Island and mainland jars vary with the grape. Drizzle on mizithra or yogurt. It is not balsamic—no barrel sour—though both start as grape.
