Pekmez is the Turkish (and wider Turkic) name for boiled-down grape must: thick, mineral-sweet, breakfast with tahini, a child's iron spoon, a cook's fruit molasses. Good pekmez tastes of raisins and earth, not of burnt sugar. A ribbon on yogurt. In stews it is a sweet-savoury glaze. Thin shiny pekmez is often cut with cheaper syrup.
