Careless

Fruit

Careless

A tier

Careless is a historic British culinary gooseberry—pale large-ish fruit, reliable kitchen acidity, and a name still found in heritage lists. Flavour is sharp when green for jam; riper fruit mellows somewhat but it is not a modern sweet dessert star. Victorian kitchen gardens knew it well. Classic for jam set and gooseberry sauce with mackerel. Heritage plantings preserve it beside show varieties. Mildew susceptibility can exceed Invicta—site with air flow. Top, tail, cook with sugar.
