Light Golden Syrup

Light golden syrup is the paler, milder invert-cane pour some refiners pack beside the classic amber tin—same family as Lyle's, a little less toffee. It still resists crystallisation and still tastes of butterscotch, not of honey. Use it in flapjacks and pale sponges when classic golden would brown the crumb more than you want. It is not corn syrup and not maple.
