Glucose syrup powder is a dried, often maltodextrin-leaning syrup designed to reconstitute or to bulk a dry mix. It brings the anti-crystallising habits of glucose syrup without the drum. Confectioners dust it into fondants and ice-cream premixes; beverage powders use it as a carrier that is only gently sweet. It is not as sweet or as browning as dextrose, and it is not table sugar. A high-DE syrup powder will taste sweeter and stickier than a low-DE one. If a recipe wants liquid glucose, dissolving this powder is an approximation, not a perfect swap—water balance changes.
