Lesser galangal is the kitchen name for Alpinia officinarum (and sometimes confused with kencur). Expect denser flesh and a fiercer, more medicinal perfume than greater galangal’s pine-citrus openness. Clarify which plant a recipe wants—Thai pastes almost always mean greater; some Indonesian and Chinese uses want lesser or kencur. Dried lesser galangal should be sliced thin for simmering.
