White fish paste is mild lean fish (often pollock or similar) pounded or processed for fish balls and cakes: pale, clean, the Asian wet-market default. It should smell of the sea, not of bleach. Poach or fry. Surimi paste is the more elastic industrial cousin. Seasoned paste is already salted and spiced.
