Light fig syrup is a shorter cook: gold-brown, more fresh-fig and less caramel, pourable for drinks and pale desserts. It can taste green if the figs were underripe. Use it in a sparkling drink or a panna cotta drizzle. It will not stand up in a lamb jus like the dark grade.
