Dried-fig syrup is simmered from dried fruit, so it tastes of store-cupboard figs: deeper, more date-like, useful out of fresh-fig season. It can be thicker and more tannic from the skins. A winter cheese-board syrup. Rehydrate quality dried figs; dusty ones make dusty syrup.
