Dark fig syrup is a long reduction of fig juice or cooked figs: mahogany, jammy, almost raisin-honey, for yogurt, cheese, and a lamb glaze. Seeds may be strained or left as grit. It is a fruit molasses, not a bar grenadine. A spoon with pecorino is enough. Burnt fig tastes of ash.
