Syrup
Non-Alcoholic Falernum Syrup
A tier
Non-alcoholic falernum is a bar syrup of lime, almond, ginger, and clove without the rum base: easier to keep in a pastry kitchen and in a dry country. Flavour should still be Caribbean spice, not gingerbread-only. Use it 1:1 for velvet in a mocktail; in a rum drink you may want a dash more acid. Homemade versions go this way.
