Pure crystalline ethyl vanillin is the neat, intensely sweet-vanilla needle or powder—several times stronger than vanillin, with a creamy, slightly floral lift. Flavourists weigh it like gold. A kitchen "pinch" of the pure crystal will shout over a custard. It is nature-identical in structure but commercially synthetic. Keep it dark and dry. This is the grade to specify when a compounder is building a flavour, not when a home baker wants a teaspoon of vanilla extract.
