White epazote refers to paler-stemmed or lighter-leaved market forms sometimes distinguished by vendors—still true epazote, with pungency that can vary by growth stage more than colour name. Not a different species. Judge by smell, not stem colour alone. Use as standard epazote in beans. Pale growth may indicate shade or youth; flavour can be slightly milder or simply different in top notes.
