York is a late American elderberry cultivar extending the harvest with large fruit and heavy clusters for staggered processing. Flavour after cooking is standard dark elder—earthy, purple, aromatic. Useful in mixed cultivar hedges so not all fruit ripens the same week. Plan late syrup batches around York. Freeze overflow. Fully ripe only—reddish underripe berries are poorer. Combine with Adams or Johns for season-long farm production.
