Silver Appleyard is an English dual-purpose duck with silvered mallard-like plumage, bred by Reginald Appleyard for both eggs and a plump, fine-flavoured table carcass. Meat is richer than layer breeds and more refined than pure utility meat hybrids—excellent whole-roasted for a small feast. Render skin carefully; fat yield is good without Pekin excess. Serve with orchard fruits—apple, plum—nodding to the breed’s name. A favourite of small farms selling whole ducks direct to cooks who care about breed.
