Silan is the Hebrew/Levantine name for date honey: thick, dark, caramel-fig, the bottle on Israeli and Palestinian tables for tahini, yogurt, and roasted vegetables. Good silan tastes of dates, not of burnt sugar or added glucose. A ribbon on labneh is the move. In baking it behaves like a fruit molasses. Thin, overly shiny silan is often cut.
