Wine Lees Derived
A tier
Wine-lees cream of tartar is the honest origin story made explicit: potassium bitartrate crystallised in barrels and tanks, then harvested, washed, and refined. All real cream of tartar starts as a wine deposit; this variety is sold when the producer wants that agricultural link on the label rather than a nameless refined acid. Chemically it should match the fine powder once purified. A faintly winey or grey rustic cream is under-refined and can off-colour a white meringue. Buy lees-derived for the story and the farm-winery loop; still demand a food-pure, white grind for pastry.

History
Argol scraped from wine casks was the original cream of tartar of European kitchens.
Italian and French wine regions industrialised lees recovery into refined bitartrate.
Some packs began stating wine-lees origin as a quality and provenance claim.
Natural-wine and zero-waste stories put lees-derived cream of tartar back on specialist shelves.
