Light Corn Syrup

Light corn syrup is clear, barely flavoured glucose syrup from maize, built to stop sugar crystallising in pecan pie, fudge, and candy. It is not high-fructose corn syrup in the soda sense, and it is not golden syrup. Vanilla is sometimes added in tiny amounts. Use it when a US candy recipe names it. Honey or maple will taste of themselves and set differently. Dark corn syrup is the same idea with molasses colour.
