Dark Corn Syrup

Dark corn syrup is light corn syrup with caramel colour and a little molasses flavour—brown, still anti-crystallising, used in pecan pie variants and some gingerbreads that want colour without a full molasses hit. It is a convenience blend, not a first-boil molasses. If you want real mineral bitterness, buy molasses. If you want invisible sweetness, buy light.
