Georgia Southern is a tall, open-pollinated collard with large, tender blue-green leaves long favoured in Southern gardens and markets. Slow to bolt in mild winters and generous in leaf size for pot cooking. Flavour is classic mild collard with a sweet edge after frost. Harvest lower leaves progressively for continuous pots of greens. Ideal for traditional long simmering. A heritage workhorse rather than a fancy frilly type.
