Handpicked headless cloves are buds that lost their spherical flower heads in handling—stems and calyx without the valued “nail head.” They still carry eugenol but grade lower for appearance and sometimes oil; useful for grinding and long simmering where looks do not matter. Cheaper than fancy whole heads; fine for stock pots and industrial grind. Avoid if you need studded hams or jar display. “Handpicked” claims quality sorting even within the headless grade—verify aroma.
