Tall Utah is a mid-century American Pascal-type famous for height, compact dark green ribs, and dependable garden performance in commercial districts. Stringiness is moderate when harvested on time; flavour is full celery without extreme bitterness. Many later commercial lines descend from Utah genetics in seed company catalogues. Grow or buy for full-length stalks suited to stuffing and crudités platters. Hearts are excellent braised in butter and stock.
