Graffiti
A tier
Graffiti is a branded deep-purple hybrid cauliflower with vivid anthocyanin curds that hold colour better than many older purple lines when cooked briefly. Flavour is mild-sweet with light brassica perfume; heads are dense and market-sized. The name became a retail shorthand for premium purple cauliflower in several countries. Roast or steam short to keep purple drama; long boiling fades toward grey-blue. Excellent raw for purple crudité platters. Pair with white sauces only if you accept colour bleed into the cream.
