Semi-refined carrageenan (often PES, processed Eucheuma seaweed) is cooked, alkali-treated, and dried seaweed rather than a fully extracted, filtered, and precipitated gum. Cellulose and other insolubles remain, so the powder is creamier, slightly more opaque, and cheaper than refined carrageenan. It still gels and thickens—mainly kappa or iota character depending on the weed—and is widely used in processed meats, pet food, and cost-sensitive dairy where crystal-clear gels are not required. Some jurisdictions label it separately from refined carrageenan. In the pot it needs the same ion and heat logic as its parent fraction, but expect a duller gel and a faint seaweed warmth if the wash was light. Choose refined powder when a dessert must be glass-clear or a label wants the purified gum.
