Refined carrageenan is the fully extracted gum: seaweed is cooked, filtered free of cellulose, and the polysaccharide precipitated with alcohol or potassium salts, then dried and milled. The powder is paler, cleaner tasting, and capable of clearer gels than semi-refined PES. Dairy desserts, chocolate milk, and premium plant milks specify it when haze, seaweed notes, or insoluble specks would be defects. You still choose kappa, iota, or lambda on top of "refined"—refining is a purity grade, not a gelling type. Hydration and ion rules follow the fraction. Pay the refined premium when the gel must look like glass or the drink must stay silk-smooth; save semi-refined for sausages and economy puddings.

History
Alcohol precipitation and filtration produced the first fully refined food carrageenans.
Clear dessert gels and UHT dairy drinks made refined powder the quality specification.
Regulatory monographs separated refined carrageenan from processed Eucheuma seaweed.
Premium plant milks listed refined carrageenan to avoid haze from residual cellulose.
