Lambda carrageenan thickens without forming a true gel. Its higher sulphate load keeps the chains from stacking into a network, so cold or warm milk, cocoa drinks, and some syrups gain body and a full mouthfeel while remaining pourable. It is the fraction to specify when a processor wants suspension and richness, not a cuttable dessert. It hydrates more readily in the cold than kappa or iota, which is why dry cocoa mixes and instant desserts often carry a lambda-rich cut. There is no potassium or calcium "set" to chase—only viscosity and protein interaction. Overuse turns a drink slimy; underuse lets cocoa fall. It will not stand in for kappa in a flan.
