Iota carrageenan, typically from farmed Eucheuma, forms elastic, resilient gels with calcium rather than the brittle potassium set of kappa. The texture is closer to a tender custard or a soft milk jelly than to a sliceable flan. It holds water well, resists syneresis, and shears into a creamy, thixotropic mass—useful in ready-to-eat desserts, creamers, and some processed meats that must stay moist after slicing. Heat to hydrate, then let calcium do the setting. Over-calcium makes a tight rubber; under-calcium stays as a thick sol. Iota is the grade to reach for when kappa would weep or crack, and when lambda's mere thickness is not enough structure. Flavour stays clean if the seaweed extract is well washed.
