Cremini (crimini) are brown immature A. bisporus—Italian-American market name for baby brown mushrooms with more flavour than whites. Same species stage family as chestnut/Swiss browns. Sauté as a step up from buttons; use in pasta and pan sauces. When left to mature, they become portobellos. A kitchen workhorse brown.
